The smoker is a wonderful tool, it makes meat taste so much better. But why stop at just meat? Why not smoke other things, like garlic. I have come across some tiny bottles of smoked garlic powder in the supermarket and thought, surely I can make that. And probably make it better. Yes, better.
Its pretty simple too. Start with a big bag of garlic.
After a few hours I was happy with the smoke on the garlic, I know that because I tasted a few of the slices. It was then time for the final drying which I did inside in the oven, at 170 degrees which is my ovens lowest setting. I finished the drying process inside because it was starting to rain outside.
Once the garlic is nice and dry its time to break out the blender. You could use a coffee grinder, but trust me, you don’t want to do that unless you are only going to use that coffee grinder for garlic for the rest of its life. You will never get the garlic smell out of that thing.
The blender is easier to clean. Glass cleans right up, but the rubber and plastic parts need some attention. I normally soak them in warm water with a lot of Arm and Hammer baking powder mixed in. It really helps absorb any remaining garlic smell. And keeps your wife from getting mad at you the next time she tries to make vanilla milkshakes for the kids and they end up with a strange garlic flavor. True story.
After blending the garlic strain it into a bowl and keep throwing the bigger pieces back into the blender for more attention.
You may not get many months out of it because once you taste it compared to the regular store bought garlic powder you will find yourself using it on many dishes. I use it in most of my dry rubs and it also makes great garlic bread.
