Pork Roast and potatoes.
A few weeks back I cooked this Roasted Chicken and it came out fantastic. So I figured why not try it with a pork roast? Good call, because it came out great too.
And the best part was it is so easy!
I bought a decent sized pork roast. Then tied it up and dry rubbed it.
I then took some potatoes and carrots and washed them. I then cut them up along with a large onion, put them into my lasagna pan and sprinkled them with olive oil and dry rub. Not too much olive oil, just enough so the dry rub sticks. They will get the drippings from the meat cooking which will add a ton of flavor.
Then I added my roasting tray/rib rack to the pan. If you don’t have one of these you need to get one. I have only used it once or twice for ribs, but it really comes in handy for roasting on the grill.
While I was prepping the veggies and meat I started my Egg.
I first wanted to brown the meat.
Then I set the egg up for indirect cooking by adding the plate setter and lowering the temp to 350. I put the meat onto the roasting rack, draped a few slices of bacon over it, sprinkled again with dry rub, inserted the cooking thermometer and left it alone for about an hour.
When my remote thermometer beeped that it was ready I pulled it from the grill.
I spooned out the veggies.
Sliced up the meat.
And enjoyed another great meal.
