So I decided I want to be a vegan and I made rice and beans. Then I realized it would be so much better with meat. And this Mojo marinated flap steak over rice and beans was born! And it was so good I ate it again for breakfast the next morning.
The best part about this meal was the simplicity. Open a couple of boxes, a couple of cans… I did have to dice up an onion, half a red, and half a green pepper. And naturally some garlic, but other than that, this was simple.
I added some olive oil to a pan, then cooked the onions until they were very soft. Then I added the garlic and peppers, cooked that about a minute more. Then I added the two boxes of yellow rice mix and the water the box directions called for. I let that cook according to the box instructions. When it was almost done I opened the cans of beans, rinsed them off, and threw them into the pan with everything else.
The flap steak I put into a ziploc bag and poured in some Goya Mojo marinade. I keep hearing from friends about how good this is. So I had to try it. It is good. Very citrusy, (if that’s a word) and I think it will work really well with grilled chicken.
The steak marinated for about an hour. Then I grilled it over medium high heat for 6 minutes each side. Pulled it off the grill, let it rest covered with foil for about 15 minutes. Then I sliced it up and served it.
Guess I will have to try again later at my attempt to be a vegan.
