So summer is coming. That means beach weather. And that means I need to get ready by eating better. Which to me means throwing in more salads. Since I can’t grill a salad, I made a Grilled Pork Loin Salad.
It was pretty good too.
I grabbed a homemade dry rub from the cabinet and generously applied it to the pork tenderloins. Wrapped it up and put it in the fridge for a few hours.
I cooked it over medium high heat on my copper Weber. I used a new toy my Wife gave me, its an IGrill wireless thermometer and it works great!
The IGrill hangs on the Weber and the probes run in through the top vents.
The probes then go into the pork loin.
Once the meat hit the right temperature, I pulled it from the grill and let it rest a while.
After about ten minutes I sliced it up and put it on a bed of leafy green salad with sliced strawberries and hazelnuts. My wife came up with the strawberries and hazelnuts and it really made the salad a whole lot better.
