I had a party to go to over the weekend. So naturally I wanted to cook something to bring along. I made a batch of my Smoky Bacon Potato Salad and I made a couple of Fatties. I will do a separate post for the fatties later, but anyway I wanted to try something different. I knew when I saw this post at the Smoke Ring that I had to make this one! A Cuban sandwich fattie! It was brilliant. One thing I needed for these fatties was Cuban Pork, so that’s where this delicious meal started.
The Wife was heading to the supermarket, which saved me a trip, so I gave her a list of a few items I needed. Since they didn’t sell Cuban Pork, she came back with a small pork butt and we had to cook it ourselves.
Since the closest I come to being Cuban is that I love Cuban food, I searched for a recipe. Naturally the first place I looked was at the Three Guys from Miami site. If you have not been to it, and you love Cuban food, you really need to check it out. They had a simple recipe for Cuban Pork and it tasted great!
I mixed up the marinade, then threw in the pork. I then put the marinade and pork into a ziploc bag and threw it in the fridge for a few hours.
I set up my Weber for indirect cooking by placing some coals behind a couple of firebricks. Once the temperature was good, I put the pork on the grill.
I basted it every now and then with the leftover marinade. If raw meat was in the marinade you should heat the marinade up before using it on the meat. Here is what the pork looked like after about an hour and a half.
It looks good and smells even better.
The pork cooked for about 4 hours until the internal temp hit 160 degrees. Then I pulled it off, covered it in foil, and let it sit for a while.
Since the whole purpose of this Cuban Pork was because I needed some for my Cuban sandwich fatties, I shredded it up and put some aside for the fatties.
Now I had some extra shredded pork. What to do? What to do? Oh yeah, make pulled Cuban pork sandwiches! I mixed up a little BBQ sauce with the pork and threw together some sandwiches.
