I went for a walk on the trail the other day while I was hungry. Luckily raspberries are in season and I collected and ate a few handfuls. While that helped my hunger a bit, it also got me thinking about dinner. That is when a Wild Raspberry-Bourbon Glaze over Pork idea popped into my head. So I collected a whole lot more raspberries.
These wild raspberry bushes grow everywhere near my house. They are great to pick and eat.
I ended up with about 4 cups of Wild Raspberries.
I rinsed them off, then put them into a pot on low-medium heat and started cooking them down to release the liquids.
Once they released most of the liquids I strained them with a cheesecloth to remove the pulp and seeds. I then put them back into the pot, added some Bourbon, sugar, and garlic, cause everything is better with garlic, and then reduced them down to a thicker mixture that coated a spoon pretty well.
I then seasoned the pork chops with a seasoning blend I found at Trader Joe’s.
I set the charcoal grill up for indirect cooking by putting all the coals to one side. I cooked the chops for about a minutes on each side over the coals, then moved them to the other side of the grill to finish cooking. When I moved them to the indirect side of the grill I brushed on some glaze.
The pork chops came out great!
