I have been on a sandwich kick lately, so to continue that theme I made this Grilled Tuscan Chicken Sandwich. Its a simple grilled chicken sandwich, on good bread, with mozzarella, roasted red peppers, leafy greens, and a balsamic drizzle. Yes, it tasted as good as it sounds.
This whole meal can be thrown together very quickly. I started by seasoning the chicken cutlets with salt and pepper, as always I used pink Himalayan salt and fresh ground black pepper. Good salt and fresh pepper really do make a difference.
I grilled the chicken over charcoal, but for an even faster meal you could skip some of the charcoal flavor and go with the propane grill.
I grilled the chicken for a few minutes on each side, making sure it was fully cooked. I covered the chicken with slices of mozzarella a minute or so before it was done cooking so the cheese would melt a bit. I also toasted the bread a little on the grill. I like a slight crunch to my bread.
Building the sandwich is pretty easy, I placed some of the leafy greens on the bottom piece of bread, then the melted cheese covered chicken, I added some slices of roasted red peppers, then drizzled it all with a balsamic glaze. Can’t get much easier than that.
