I have been on a grilled chicken kick lately. Sometimes they just taste good and seriously there are so many options. Sandwiches, salads, over pasta, or just plain grilled chicken on a plate. You really can’t go wrong.
My wife came up with this Reuben idea. She is great when it comes to food combinations that I have never thought about, but once she says the idea it is so obvious! And these came out great, I would dare to say that I just may like them better than a classic Reuben sandwich.
I decided to marinate the chicken in beer because I read this article from the Discovery Channel that clearly states that a beer marinade fights cancer. See, I always knew beer was health food!
I used a Smuttynose Robust Porter for the marinade.
I let that sit for about 35 minutes.
Then threw them on the pre-heated grill for a few minutes on each side.
Then I buttered slices of rye bread and put them on the grill for a few minutes after I removed the chicken.
Then I built the sandwich. I took a slice of grilled rye bread, added chicken, then put some sauerkraut (which I had previously heated up) then added slices of Swiss cheese and put that back on the grill to melt the cheese.
Once the cheese melted I added some Thousand Island dressing and served them up!
