Fatties will go down in history as an invention of pure genius. Yeah, genius!
Seriously, Jimmy Dean breakfast sausage wrapped around some apple slices and cheese, then wrapped in bacon and smoked. Absolutely brilliant!
First I thinly sliced an apple and some swiss cheese. Any cheese will work, I just grabbed the swiss cheese first and it sounded like it would be good. It was.
Open a tube of Jimmie Dean breakfast sausage and put it on a sheet of wax paper.
Then flatten it out. About a half inch thick. Then sprinkle on some dry rub.
Then add the apple slices and cheese.
Roll it into a log shape and pinch the seams to hold it closed.
Then use your finest basketweaving skills and make a bacon lattice. Ain’t that pretty?
Wrap that woven bacon masterpiece around the fattie.
I then wrap it in clear plastic wrap and put it in the frezer for about twenty minutes while I prepare the smoker. Putting it in the freezer helps it to hold its shape.
Put it on the smoker, or your Weber charcoal grill set up for indirect heat, at around 250 degrees and leave it until the internal temp hits about 165. Then pull it, slice it, and serve it.
