Have you ever had one of those weeks where you didn’t stop at all? Where you are so busy you don’t even have time to think about food? Well I didn’t have one of those weeks, because if I am not thinking about food, no matter how busy I am, something is really wrong. And this week I thought about two kinds of food, Carne Asada, and Fish Tacos.
Well I got around to the carne asada, but the fish tacos are going to have to wait until next week.
I decided to use one of my favorite marinades, pineapple juice and soy sauce.
I put the flap steak and marinade in a ziploc bag and then thought “maybe I should spice it up a little.” So I added some Chipotle Tabasco sauce.
The Tabasco has a nice flavor and gives the steak a little kick.
Once the grill got hot enough I put the flap steaks on.
I gave them 5 minutes on each side.
And while the steaks were cooking I fried up some onions and peppers.
Once the steak was cooked I pulled it off and wrapped it with foil for about 15 minutes. This is very important. If you slice it up right off the grill all the juice runs out. But if you let it rest a while the juice gets absorbed into the meat. I don’t know the technical term for what happens, but trust me its important.
After the mandatory wait period, I sliced up the meat.
Then I loaded up my tortilla with guacamole, carne asada, onions and peppers, cheese and beans.
Then its just a matter of rolling it up and eating it.
It tastes goood! It was so good I am going to put up another picture…
